    **Cocoa is Sweetening Things Up**

    Traditionally, hot chocolate is a lovely reminder of cozy fireside evenings, but the drink is set to undergo a transformation by 2025. According to Beverage Daily, consumers are not just looking for a simple cup of cocoa anymore; rather, they are interested in exploring gourmet varieties that go beyond the basic hot cocoa topped with marshmallows. There is a tangible demand for both sweet and savory infusions, alongside plant-based versions of this beloved drink.

    Jason Francis, the director of food and beverage at The Harpeth Hotel in Franklin, Tennessee, mentions a shift in restaurant offerings. “People are moving away from ‘chocolate-flavored’ syrups and artificial chocolate flavors in their coffees, instead using fresh cocoa to impart those rich and sweet flavors.” This newfound appreciation for fresh cocoa is also making its way onto dessert menus. As Francis elaborates, “We pair chocolate and coffee together in two of our desserts on our current menu — our hazelnut tiramisu and espresso crème brulee.” New items, like chocolate cheesecake infused with peppermint for the winter season, further underscore the trend of cocoa innovation.

    **Flowers are Blooming**

    Particularly noteworthy is the burgeoning trend of edible flowers making their way into the culinary scene. Rich Iannone, the corporate director of food and beverage programming at Valor Hospitality Partners in Atlanta, Georgia, remarked that the use of edible flowers has evolved significantly. “This trend has been growing over the past few years and has come a long way since the orchid on the tiki drink.” Flowers are no longer restricted to garnish; they are now integral elements poised to enrich dishes.

    Mixologists are tapping into the aesthetic appeal and unique flavors of flowers, infusing their cocktails with vibrant colors. Similarly, chefs are incorporating flowers into salads and other dishes to create added depth and a dazzling visual presentation. The NEXT Flavor Report by Rubix Food supports this trend, highlighting that Gen-Z consumers are particularly fond of hibiscus, lavender, and cherry blossoms, which frequently grace both hot and cold beverages.

Bill Fritz, director of food and beverage at Caesars Atlantic City in New Jersey, attributes this spike to strategic marketing targeting Gen Z. The success of the “Split The G” challenge, a playful drinking game that emphasizes the iconic “G” on the Guinness glass, has caught the attention of social media users.

    Fritz notes that this modern marketing approach has helped Guinness connect meaningfully with new audiences while maintaining a stronghold in its legacy. The brand’s ability to balance a historic reputation with contemporary appeal speaks volumes about its enduring success. According to Iannone, Guinness has successfully engaged younger generations, signifying its relevance despite being over 250 years old. “It’s a great product that has always appealed to the generations,” he asserts.
