Offered one week every year, the Ice Cream Short Course attracts industry professionals such as employees from Tillamook, Hudsonville, Turkey Hill, Perry’s, Stewart’s Shops, Hershey, Friendly’s, Graeter’s, Jeni’s, and more. Even ice cream legends Ben and Jerry once graced the course with their presence.
This year, the course saw a diverse group of participants – from industry experts to ice cream enthusiasts with little to no experience. The curriculum delved deep into the science of ice cream, exploring topics such as milk composition, dairy ingredients, food microbiology, and ice cream physics.
Ross Cohen, CEO of Sweet Cow in Colorado, emphasized the importance of understanding the ice cream mix – the milk, cream, sugar, and other ingredients that form the base of every ice cream creation.
